To take charge of the full operation of the kitchen in the absence of the Executive Chef.
Inspect food preparation areas to ensure observance of safe, sanitary food handling practices
To season and cooked food according to recipes and personal judgement and experience.

Observe and test food to determine if they have been cooked sufficiently using methods such as tasting , smelling or piercing them with utensils.

To maintain adequate mise-en-place for each shift.

To co-ordinate with the pastry with regards to the food items needed to prepare the menus.
